Ballybrado's best Banana Bread with White Spelt Flour

This is probably the most delicious way to use very ripe bananas!


Preheat oven to 160ºC fan.
Mash bananas and mix with sugar in a bowl.
Add all other ingredients except hazelnuts and mix thoroughly.
Fold in hazelnuts
Place dough in greased 2lb (26cm) loaf tin.
Bake in bottom of oven for 40-45 mins. or until skewer inserted comes out clean.
Leave to cool on a wire rack.


3 ripe bananas

230g sugar

250g Ballybrado Organic White Spelt Flour

2 eggs

30 ml neutral oil

20g baking powder

65ml milk

Pinch of ground vanilla/vanilla essence

Pinch of cinnamon

100g roasted hazelnuts (chopped or whole, as you prefer)
