Einkorn-Buttermilk Pancakes

So fluffy and yummy!

Method

1. Beat eggs and buttermilk until thick and creamy.

2. Add melted butter and mix.

3. Combine flour, salt, sugar and baking powder in a bowl and mix.

4. Add all dry ingredients to the egg/buttermilk mixture and mix just until you have a smooth dough. Don’t over-mix.

5. If dough is too thick, add some more buttermilk. If dough is too thin, add some more flour.

6. Leave to rest for about 5 mins.

7. Pour small portions of dough into a heated frying pan using a ladle. Bake on both sides until golden-brown.

8. Serve plain or with topping of choice, e.g., maple syrup, butter, chocolate spread, fresh fruit, raisins, lemon juice and sugar…

250ml buttermilk

2 eggs

30g melted butter

170g Ballybrado Organic Whole Einkorn Flour

Pinch salt

50g sugar

10g baking powder
